Picholine Olive

A thin crunchy crust, big savory chunks of salty green olives, and scattered with a little coarse sea salt.  A big favorite of Amy’s Bread staff.

Ingredients

Unbleached wheat flour, picholine (green) olives, water, poolish starter, kosher salt, and yeast, with a coarse sea salt crust.
